Great question! Black locust is actually the slowest of all the honeys to crystallize. Because the nectar collected from black locust blossoms contains less than 30% glucose and an exceptionally high concentration of fructose, the glucose never reaches the saturation threshold required to easily bind together and form crystals. As a result, pure black locust honey can easily remain in a perfectly clear, fluid state for much longer without any special heating or filtering.
