Are the bees that produce this honey solely pollinating knotwood blooms or do they also have access to other flower

We bring the bees to areas in New York with high concentrations of knotweed. We can't guarantee they won't forage on other flowers as they can travel a couple miles, but in the fields we bring them, there are very few other options, which leads to highly concentrated knotweed pollen and the distinct caramel-like dark honey.
