It depends on the varietal! At Crystal's our honey comes in a few different textures naturally.
Some of our honeys like Black Locust tend to stay liquid longer due to their higher fructose content. Others like our Clover and Wildflower crystallize more readily and can become thick and scoopable over time. Our creamed honey is intentionally processed to achieve that smooth, spreadable, scoopable consistency right from the start.
Unlike store bought honey which is typically heated and filtered to stay permanently liquid, our raw honey will naturally shift in texture over time depending on the varietal, temperature, and age. So what arrives liquid may eventually become thick or crystallized, and that is a good sign!
