My wildflower honey taste like molasses why?

I’ve been buying this honey for quite some time and I’ve never had it taste like molasses. It’s normally a beautiful floral taste.

The flavor of our honey can vary from year to year depending on the wildflowers the bees pollinated. Late-season wildflowers tend to pull from stronger, darker nectars. That can push the flavor toward earthy, caramel or molasses notes.
