That makes total sense! Honey arrives in different states depending on the temperature during shipping and the time of year. The good news is that your honey will absolutely solidify again on its own, it just needs a little time in a cool spot. We would actually recommend storing it in a cool dark cupboard rather than the fridge. The fridge can cause it to solidify too hard and can affect the texture over time. A cool room temperature spot will bring it back to that solid creamed consistency you love, usually within a few weeks!
