What is that coating on top of the honey in the pic of the 60# pail, and is it good to eat?

The coating in the photo is common on the bulk pails. it is often due to air being caught up in the honey during the extraction process and since we pack so cold it takes a long time for the air to come out of the honey. It will not hurt you and you can eat it.
