Time to crystalize can vary by variety and is mostly determined by the sugar makeup of the honey. I have seen knotweed stay liquid for several months vs the wildflower which typically granulates in 3-4 months.
is it crystallized? Raw Knotweed Honey
If not, what's the average time it'd take it to crystallize at 65°F?
