Why does this honey now look processed? Previously it was solid at room temperature, now it's very viscous

Our raw honey is sold Liquid and or Granulated. If you honey is Liquid it has likely just been poured withing the last month. Demand for the honey is often so high that the honey doesn't have time to granulate before it ships out. We don't heat honey to be liquid unless we are asked to do so before it ships.
